Norwegian Christmas dishes

Rommegrot (Rømmegrøt) is a Norwegian porridge made with sour cream as the basic ingredient. Other ingredients include whole milk, wheat flour, and salt. 
Rømme is a Norwegian word meaning a heavy sour cream made from cream or blend of whole milk and cream which is acidified. Grøt is a term for mush or pudding. Traditionally, Rommegrot is a delicacy prepared for special occasions, including holidays. Served with butter, sugar, and cinnamon (I like to add chopped almonds, brown cheese and raisins). Recipe
Lutefisk 

Lutefisk is a traditional dish of the Nordic countries and parts of the Midwest United States. It is made from stockfish (air-dried whitefish) or dried/salted whitefish (klippfisk) and lye (lut). Its name literally means "lye fish."
Lutefisk is usually served with a variety of side dishes, including, but not limited to, bacon, green pea stew, boiled potatoes, white sauce, mustard, white sauce with mustard, melted or clarified butter.  Recipe

Pork ribs - Lars Røed Hansen
Pork ribs (Norwegian: Ribbe) with a crisp surface is the most popular Christmas dinner in Norway. It is served with sauerkraut/red cabbage, boiled potatoes, lingonberry and gravy. Some, including me, also like it with green pea stew, mustard and sausages. Recipe

Pinnekjøtt is a main course dinner dish of dried lamb or mutton ribs. Pinnekjøtt is a festive dish typical to Western- and Northern Norway, served with puréed swede and boiled potatoes. Good together with sausages. Recipe

Reindeer roast with game sauce (Norwegian: Reinsdyrstek med viltsaus) is a favourite of mine. I do not use r
ed currant jelly and brown goat cheese in the sauce, but blackcurrant juice or jam, sour cream and game seasonings. Serve with boiled, mashed or baked potatoes, Brussels sprout or broccoli, and lingonberry jam/lingonberries. Recipe


Desserts
Multekrem 

Multekrem is a traditional Norwegian dessert, made by mixing cloudberries (or cloudberry jam) with whipped heavy cream, sugar and vanilla, and it's lovely with a teaspoon of cloudberry liqueur.

I also love vanilla ice cream with warm cloudberries that are sweetened by honey.

Ris a la mande (Norwegian: Riskremis made out of rice pudding mixed with whipped heavy cream, vanilla (and I like it with chopped almonds), and is usually served with a red berry sauce/cherry sauce.
